It's getting cooler and that means soups and stews in the slow cooker, whooooop.
Anyone got any healthy recipes to share?
One of my faves and very autumn is Spicy Parsnip and Carrot soup. Fry chopped onion with salt for 5 minsuntil its soft. Add chopped parsnips (x2) and carrots (x1) and garlic, fry for another 2 mins. Stir in Harissa and Cumin, fry for another couple of mins. Add roughly a cup of red lentils and stir them in. Add 1 litre of veg stiock, bring to boil and simmer for 20-25 mins (until everything is tender). Then blend so its all smooth. Add more stock if its too thick and more harissa, salt, pepper to taste. Serve with a squeeze of lemon and /or some yoghurt (and or herbs, spring onions chopped). Yum
